Zucchini Muffins
- 1 1/4 c flour
- 1/2 c almond meal
- 1/2 t salt
- 1/2 t soda
- 1/2 t powder
- 1/2 t nutmeg
- 1 t cinnamon
- 1 egg
- 1/3 c canola oil
- 1/3 c applesauce
- 2 T yogurt
- 1/2 c sugar (reduced from 3/4 c)
- 2 t vanilla
- 1 c zucchini
- 1/4 c shredded coconut
- Combine flour, almond, salt, soda, powder, nutmeg and cinnamon in a medium sized bowl.
- Combine egg, oil, applesauce, yogurt, sugar, vanilla in large bowl.
- Add dry ingredients to wet.
- Stir in zucchini and coconut.
- Pour into 12 lined muffin cups. Bake 325 for 30 minutes.
