Hainan Style Chicken - One Pot

One pot recipe that both BDs enjoyed. I could only find skinless, boneless thighs so used that. And I forgot to reserve 1/3 of the aromatics, so it all went into the rice (of which there was extra) and it turned out great. 

  • 4 pieces chicken thighs, skin on/bone in/optional (~700 g)
  • 1 t salt
  • 1 pinch white pepper
  • 2-3 rice cups of rice (recipe called for 2, but I used 3 to have leftovers)
  • 2 T neutral cooking oil
  • 2 stalks scallions, finely chopped
  • 1 T minced ginger
  • 1 small clove garlic, minced
  • 1/4 t salt
Sauce
  • 2 T light soy sauce
  • 1 T fresh lime juice (or less)
  • 1 t sesame oil
  • cucumber slices, blanched greens (spinach, bok choy)
  1. In a bowl, sprinkle the chicken thighs with the 1 t salt and white pepper. Rub it in. Leave to marinate for 10 minutes.
  2. Heat oil over medium heat. Add the scallions, ginger and garlic. Fry until fragrant - do not burn.
  3. Scoop 2/3 of the mixture into the rice cooker. Add the rice and extra 1/4 t salt. Add the water. Place thighs on top.
  4. Set to cook. When done, leave covered for an additional 10 minutes to let the chicken continue to cook.
  5. Take chicken out and slice into strips (cutting off the bone if there).
  6. Serve the rice, with chicken on top and cucumber slices.
  7. Mix the sauce ingredients with the aromatics mixture that was saved earlier. Use as a dipping sauce or to pour over the chicken and cucumbers.

Macaroni and Cheese

I made a Mac and cheese with fancy white cheddar and it was awful. I tried a different recipe using the pre-shredded crappy cheddar at the store. It uses an egg instead of flour as a thickener. I used the herbed breadcrumbs and the kids didn't like it. Ate leftovers for a week.

  • 4 c/450 g macaroni
  • 6 T butter, divided
  • 2 eggs, slightly beaten
  • 4 c milk
  • 1 generous t dry mustard
  • 2 t salt
  • pinch of black or cayenne pepper
  • 6 c shredded sharp cheddar
  • 1/2 c fine bread crumbs (1 c was too much)
  1. Preheat oven to 220C/425F. Grease a large casserole dish (~9x13).
  2. Cook macaroni just until al dente. Drain well.
  3. Melt 3 T butter in pot and add pasta. 
  4. Whisk eggs, milk, mustard, salt, and pepper. Add to pasta with cheese. Stir constantly over med-high heat until cheese melts and sauce thickens.
  5. Continue cooking, stirring constantly for 5 min or until very thick and creamy.
  6. Transfer to prepared dish.
  7. Melt 3 T butter in small saucepan and mix with bread crumbs. Sprinkle evenly over top.
  8. Bake 10-15 min.

Carbonara

BDs favorite pasta dish. Couldn't find guanciale in Jumbo (available at AH) so substituted pancetta. Could use more spaghetti/less sauce ratio (XBD agreed). Very easy to put together and beats the weird carbonara sauce that MM gets from the store that is filled with cream and garlic. BDs gave it 5 *s but still only 3 from me (had stomach ache so maybe higher rating next time).
Jun 2024 I've made this 5 times now. The guanciale is easier to cook but DBD prefers pancetta because it's less fatty. One time I had leftover egg yolks so used 2 yolks in place of 1 egg. Increasing to ****, as it's easy to prepare and doesn't hurt my stomach. BDs give it 5 stars which is why I've made it so often for them.
  • ~400 g spaghetti (was 350 g/12 oz, 500 g is not saucy enough)
  • 200 g guanciale (or sub 100 g pancetta with some oil, or full 200 g for extra meaty and salty)
  • 4 eggs, beaten
  • 100 g pecorino (not padano, not parmesan)
  • black pepper
  1. Cut the guanciale/pancetta into small pieces. Cook over medium heat for 2-3 minutes. (No oil needed for guanciale because it's so fatty. Some oil for the pancetta though.)
  2. Zest the pecorino. Combine with eggs and black pepper. Mix until creamy.
  3. Boil the spaghetti in salted water until al dente.
  4. Move spaghetti to meat skillet. Cook with the guanciale over high heat until sizzling.
  5. Turn OFF the heat. Add in the pecorino mixture, stirring constantly to prevent curdled eggs.
  6. If it's too creamy, add some pasta water. If it's too runny, add some more pecorino.
  7. Serve on plate/bowl with a side salad.

Pierogi

I could easily buy White Cheddar and Potato pierogies in the freezer section at my local grocery store in Toronto, but Cheddar is not really a thing in the land of Gouda. So I thought I'd try making this from scratch, but with orange cheddar. DBD liked them a lot. I thought the cheese was overpowering and would reduce the ratio next time.

1/16/25 made 42 pierogi, freezing immediately. Boiled then sauteed with buttered yellow onion. Both kids ate it (along with chicken noodle soup), xbd preferred extra crispy. Had too much filling leftover.

July 2025 - stuffed more aggressively so not as much leftover filling. ~46 pierogi

Dough

  • 5 c flour
  • 1 t sea salt
  • 2 eggs
  • 1 T butter, softened
  • 1 c lukewarm potato water* (may not use all of it)
  • 1/2 c milk
Filling
  • 2 lb potatoes, Yukon gold (about 5)
  • 3 c shredded sharp cheddar (would use less next time)
  • optional: 1/2 c milk
  • 1 t sea salt
  • 1/2 t pepper
  1. Leave the peel on the potatoes. Roughly quarter them so they cook faster. Add to pot with enough cold water to cover them. Salt the water. Bring to boil, and cook until fork tender.
  2. *Reserve 1 cup of the cooking water (for the dough). Drain and peel the potatoes (they should come right off). Add the cheese, salt and pepper and mash with a fork or potato masher. Add the optional milk to make it creamier. Season to taste.
  3. Dough
    1. Sift the flour and salt in a large bowl. Make a well in the middle or use a dough hook.
    2. Add eggs, then butter and milk, and mix.
    3. Gradually add the potato water and mix until dough starts to form. Add enough water until a ball forms and the dough is not sticky.
    4. Wrap the ball in plastic wrap and refrigerate for 20 min to rest.
    5. Divide dough into 4 pieces, keeping covered to prevent drying out.
    6. Divide one piece into 10-12 pieces. Roll to about 1/8-1/6" thick circular shape, about 3" in diameter.
    7. Place a heaping tablespoon full of filling in center. Optional: Dab edge with water. Fold in half to seal into half moon shape.
    8. Place on lightly greased cookie sheet, keeping covered until ready to boil.
    9. Optional: Freeze the uncooked batch to cook later
    10. Boil pierogi until they float.
    11. Optional: Freeze the boiled batch to reheat later.
    12. Optional: Saute chopped onion with butter over medium heat until golden brown. Then add the boiled pierogi until onions are caramelized and pierogi are crispy. Add more butter as needed.

Meat Sauce

I made this the first time and ran out of canned tomato so dumped in a jar of pasta sauce. Second time I used the proper tomatoes. Kids really like the sauce. I would like to make extra to freeze but haven't done it yet. Source.

  • 1.5 T olive oil
  • 2 cl garlic, minced
  • 1 onion, finely chopped (yellow, brown or white)
  • 500 g ground beef (or half pork)
  • 1/2 c dry red wine (125 ml)
  • 2 beef bouillon cubes
  • 28 oz can crushed tomato or tomato passata (800 g)
  • 2 T tomato paste
  • 2 t sugar
  • 2 t Worcestershire sauce
  • 2 bay leaves
  • 1/2 t thyme or oregano
  • variations: 1 carrot+celery sauteed with onion; bacon; 1 T soy; chili
  • salt + pepper
  • serve with: pasta, parmesan, finely chopped parsley, mozzarella
  1. Heat oil in a large pot or deep skillet over medium high heat. Add onion and garlic, ~3 min or until light golden and softened.
  2. Turn up to high heat and cook meat, until browned.
  3. Add red wine. Simmer and cook for 1 min, scraping bottom of the pot until smell of alcohol is gone.
  4. Add remaining ingredients except salt and pepper. Stir, bring to a simmer and then turn down to medium so it bubbles gently.
    1. Fast: Cook for 20-30 min without a lid, stirring occasionally. Add water if sauce gets too thick.
    2. Slow: Add 3/4 c water, cover with lid and simmer on very low for 2-2.5 hours, stirring every 30 min or so. Uncover and simmer for 20 min to thicken sauce.
  5. Add salt and pepper to taste. 
  6. Optional: reserve 1 c pasta cooking liquid, combine undercooked pasta with sauce and 1/2 c of the reserved cooking water. Toss gently for 2 min on medium heat until the spaghettit turns red and the sauce thickens.

Chicken, Chickpeas and Rice with Spinach

Made this and felt the rice ratio was way too low. Was unclear when chicken should have been cut. Easy one pot meal.

  • 2 c rice (increased from 2/3 c)
  • 1 lb chicken breast, boneless, skinless
  • 3 c spinach, chopped
  • 1 c canned chickpeas, rinsed and drained
  • 1 carrot, shredded
  • 6 scallions, chopped
  • 2 cl garlic
  • salt and pepper
  • 2 T olive oil
  1. Cook the chicken in pan on both sides until golden brown. Set aside
  2. Sauté onions and garlic for 30 seconds with 1 T olive oil.
  3. On med-high heat, stir in spinach, chickpeas, carrot and rice. Add salt and water to cover.
  4. Cover with lid and reduce heat to medium. Cook until the rice is ready, stirring and adding water if needed.
  5. Once rice is done, add 1 more T olive oil and salt to taste. 
  6. Slice the chicken, stir it in and cook for 3-4 more minutes. Season as needed.

Fresh Rolls

Thai or Vietnamese style fresh rolls are a fun group activity for dinner. The special plastic plates for building them make it extra quick.

  • Rice paper wrappers
  • Protein: shrimp, chicken, tofu, pork
  • cucumber sticks
  • carrot, shredded
  • soft lettuce, leaves
  • vermicelli noodles, cooked and optionally tossed with sesame oil (refrigerate until needed).
  • mint, coriander, thai basil
  • mango, ripe and sliced
  • avocado slices
  • sauce (see below)
  • optional: scallions, bell pepper slices, bean sprouts, purple cabbage
  1. Shrimp: Thaw frozen shrimp. Place in boiling water for 2 min. Drain and run in cold water or dip in ice bath to stop cooking. Peel and cut in half (if large). Refrigerate until needed.
  2. Chicken: Saute/boil, flavored or not. Tofu: cook
  3. Lay out items on table and each person rolls their own. 
    1. Dip wrapper in pie plate full of water. No need to drip off excess water. Place on blue plate. It will continue to soften while you place your ingredients. The holes in the plate prevent it from sticking.
    2. Add sauce, noodles, protein and favorite fillings and herbs.
    3. Roll tightly at one end. Half way, fold in each end and continue rolling. Dip in extra sauce if you didn't put enough inside.
Sauce choices
  • hoisin sauce (optional: mixed with finely chopped peanuts)
  • peanut sauce
    • 1/3 c creamy peanutbutter
    • 2 T rice vinegar
    • 2 T soy sauce
    • 2 T maple syrup
    • 1 T sesame oil
    • 2 cl garlic, minced
    • 2-3 T water, as needed for right sauce consistency
  • Vietnamese sauce
    • 1/4 c water
    • 2 T fresh lime juice
    • 2 T white sugar
    • 4 t fish sauce
    • 1 cl garlic, minced (optional)
    • 1/2 t garlic chili sauce

Thai Chicken Meatball Noodle Soup

Tried a new recipe for MM's bday, hoping the meatballs would be appreciated by BDs (possibly eaten with rice). Adults liked it for its fresh and different flavor profile. XBD claimed it was ok to make once a year. Inspired by a Grumpy Chef.

  • 1 lb ground chicken
  • 1 egg, beaten
  • 1/2 c plain bread crumbs
  • 2 t soy sauce (low sodium preferred)
  • 1.5 t finely grated fresh ginger
  • 2 green onions, chopped
  • 2 cl garlic, finely chopped
  • 1/4 t crushed red pepper flakes (did not have)
  • 1 T olive oil
  • 2 T red curry paste (or more to taste)
  • 3/4 c sliced red onion
  • 3 c chicken stock
  • 1 c full fat coconut milk (14 oz)
  • 1.5 c sliced bok choy
  • 1/4 c chopped cilantro
  • 3 T fish sauce
  • 2 t honey
  • salt + pepper
  • 1 pkg dried rice noodles (8 oz)
  • 4 wedges fresh lime (forgot)
  1. Preheat oven to 375F/190C. Lined rimmed baking sheet with parchment paper.
  2. Combine ground chicken, bread crumbs, egg, soy, ginger, green onions, garlic and red pepper flakes. Shape into 1 inch balls (about 2 t) and place on lined baking sheet.
  3. Bake until no longer pink in center, about 12 min. Remove from oven and set aside.
  4. Heat olive oil in large pot over medium heat and add curry paste. Cook until fragrant 1-2 min. 
  5. Add red onion, ~2 min.
  6. Add chicken stock, coconut milk, bok choy, cilantro, fish sauce, and honey. Stir until combined. Bring to boil.
  7. Reduce heat to medium and add meatballs (can set some aside for picky eaters). Simmer until heated through, ~6-8 min.
  8. Season with salt and pepper.
  9. Place rice noodles in large bowl and cover with boiling water. Set aside until softened, ~15 min. Drain well. 
  10. Divide noodles among bowls. Ladle soup and meatballs on top. Serve with fresh lime.

Pastitsio

I took a trip to Athens and discovered Greek moussaka, which was different from Serbian moussaka earlier in the summer. But I was more impressed with a pasta bake called pastitsio, which is similar, but with pasta instead of potatoes, and no eggplant. It is hard to find the ingredients here so I substituted lots of items and the kids enjoyed it enough. They still aren't a fan of the cheese but they really enjoyed the rest of it. Later I found the correct pasta shape in my local grocery store. I couldn't monitor it while baking so it came out over cooked on the top but still tasting great. I also couldn't fit everything in the dish I used, so left out half the sauce. Since the kids aren't a fan, I've cut the sauce amount below in half.

  • 400 g Greek bucatini (sustitute Italian bucatini, ziti, penne, macaroni)
  • 120g feta, crumbled
  • 2 egg whites
Meat Sauce
  • 2 T olive oil
  • 3 garlic cloves, minced
  • 1 red onions, finely chopped (or substitute yellow or brown onions)
  • 1 kg ground beef
  • 3/4 c red wine
  • 800 g (28 oz) canned crushed tomato
  • 2 beef bouillon cubes, crumbled
  • 2 T tomato paste
  • 1 t sugar
  • 1 bay leaf
  • 1/2 t cinnamon powder
  • 1 cinnamon stick (or extra 1/2 t powder)
  • 1/4 t ground cloves
  • 3/4 t salt
  • 1 t pepper
Greek Bechamel (halved)
  • 50 g (3.5 T) butter
  • 3/8 c flour
  • 2 c milk
  • 1/16 t nutmeg
  • 1/4 t salt
  • 50 g Kefalotyri Greek cheese (or substitute Romano or Parmesan), finely shredded
  • 1 egg yolk
Topping: 75 g Kefalotyri Greek cheese (or sub Parmesan, Romano), finely grated
  1. Meat Sauce
    1. Heat oil in large pot over high heat. Add garlic and onion, cook for 2-3 min, until onion is softened.
    2. Add beef and cook, breaking it up until it turns brown.
    3. Add wine and cook until it is mostly evaporated, ~3 min.
    4. Add remaining meat sauce ingredients. Stir, bring to simmer, then reduce heat to medium-low so it simmers gently. Cook for 45min-1hr until liquid is almost gone, stirring occasionally. It should be a thick mixture with little liquid.
    5. Remove from stove and cool for at least 30 min (to room temperature ok).
  2. Greek Bechamel
    1. Melt butter in large saucepan over medium heat. 
    2. Add flour and stir 1 min.
    3. While stirring, pour in half the milk. It should turn into wet paste. While stirring, pour in remaining milk. The lump should easily dissolve until it's lump free. Whisk vigorously.
    4. Cook for 5 min, stirring so the base doesn't stick. It should be thick enough to coat the back of a wooden spoon and you can draw a path across it with your finger.
    5. Remove from stove. Stir in nutmeg, cheese and salt.
    6. Let cool for 5 min.
    7. Whisk in egg yolk quickly. Cover and set aside. If sauce gets to thick to pour, just reheat on low until pourable.
  3. Pasta
    1. Cook the package according to instructions, MINUS 1 min.
    2. Drain, return to pot. Let cool 3 min.
    3. Stir in egg whites. (Do this just before assembly so they don't dry out. This helps the pasta set better to get neat slices)
    4. Gently stir in feta.
  4. Assemble and bake
    1. Preheat overn to 180C/350F.
    2. Place pasta in 9x13 tall baking dish. Arrange bucatini so they are going in the same direction.
    3. Top with meat sauce and smooth surface.
    4. Pour bechamel over.
    5. Sprinkle with cheese.
    6. Bake 30 min or until crust turns golden.
    7. Cool for 10 min before serving.

Dal Saag - Spinach Dahl

Quick and delicious. 1/2 c of dahl doesn't look like much but it expands quite a bit. Based on original recipe but left out onions and missing spices.

  • 1/2 c moong dal (the quickest cooking one that doesn't require soaking, and easiest to digest, but other dahls can be substituted if soaked)
  • 1 c water
  • 1/2 medium yellow onion, chopped (90g, 3/4 c) [omitted]
  • 1-4 cloves garlic
  • 1 roma tomato, chopped
  • 1 c baby spinach (8 oz/227 g)
  • 1/4 t turmeric (did not use)
  • salt
  • 2 t ghee, melted
  • 1/4 t cumin seeds
  • 1/2 t mustard seeds (did not have)
  • pinch of asofoetida
  • 1-4 dried chillis

  1. Rinse the dahl until water is no longer cloudy. Fill bowl halfway with water and swish with fingers.
  2. Heat oil in pan. If using onion, saute 2 minutes until translucent. Add the garlic and saute until fragrant. Add the tomatoes and optional dried chilis, plus 1/2 t salt. Tomatoes should soften and release juices. About 1-2 min.
  3. Add the washed dal, water (and turmeric). Layer the spinach on top. Cover with lid. Cook for 30 min. Dal should be cooked through and mushy to the touch. Use a wooden spoon to stir until the dish becomes creamy. Add 1/2 t salt (or to taste). 
  4. In separate saucepan, melt ghee. Add mustard seeds. When they start to pop, add the cumin, asofoetida, and 1-2 dried chilis. After a few seconds, cumin seeds should dance. Pour this spice tadka over the dal. 
  5. Serve with rice.

Aussie Meat Pie

I found the recipe and MM cooked the meat both times. I just assembled them the first time. Second time he did it for the international festival. He used way more black pepper the second time and it gave it a really nice kick. We still want to try a mushroom version, but this was a good start. First time we used rib steak, second time chuck steak with less broth. First time made 6 muffins, 2 texas muffins and 6-5" pies. Second batch made 24 muffin size pies. Recipe adjusted below (original in parens).
6/6/23 Made this on my own with soup meat, using just under 1 kg all in 1 day. Made exactly 6-5" pies. I thought they were fine but MM said not as good.

  • 3 T olive oil
  • 1.5 kg chuck steak, cut into 1 cm cubes
  • 1 onion, diced - brown, yellow, white or shallots (2)
  • 3 garlic cloves, minced
  • 2 T tomato paste
  • 3 c beef broth (4 c)
  • 1 c red wine (dry and dark, not light like pinot noir)
  • 2 bay leaves
  • 1.5 t salt
  • 2 t black pepper*
  • 3 T cornstarch*
  • 4 T water
  • 1 egg yolk, lightly beaten (or whole egg for lighter finish)
  • puff pastry
  • quiche pastry/shortcrust pastry (1 jumbo circle has 4 5" pies worth)
Day Ahead: Beef filling
  1. Heat 1 T olive oil in large pot over high heat. Add layers of beef to sear outside until lightly browned. Remove to bowl and repeat.
  2. Lower heat to medium high and add the remaining olive oil. Cook onion and garlic until translucent (~5 min).
  3. Return beef to pot and all other filling ingredients EXCEPT cornstarch and water. Mix to combine. 
  4. Simmer then lower heat to low/med-low so bubbling super gently. Leave to cook for 2 hours, stirring occasionally. Beef should be very tender.
  5. Mix cornstarch with water to make slurry. Pour into pot and mix. Cook for 5 min until sauce thickens.
  6. Remove from heat to cool. Season with additional salt and pepper.
Assembly
  1. Preheat oven to 180C/350F.
  2. Grease muffin tins, silicone cups or 5" pie plates.
  3. Cut quiche pastry ~1" bigger than tin/cup. Press into pan leaving overhang/thick edge. Fill to brim with filling.
  4. Cut puff pastry to size. Place lid on top of filling and gently press to join the doughs.
  5. Slice 3-5 times from center, widening the slits to ensure they stay open.
  6. Brush with egg wash.
  7. Bake for 20-25 min until dark/deep golden brown.
  8. Allow to rest for a few min before turning out to wire rack.
  9. Serve warm with tomato sauce (aka Australian for ketchup).

Chicken Peanut Noodles

I wanted to try a chicken satay noodle recipe and bought pre-chopped veggies at the store to make it all go faster. I bought a bag of beautiful red cabbage, but this turned out to be a disaster while cooking. It immediately started turning the chicken blue...and then dull black, making the dish visually unappealing. However, outside of the looks, it was fine. But next time I would use white cabbage for sure. I used 150 g noodles and 300 g chicken but did not increase the sauce ratio (should have though). It's also easy to dump in extra vegetables and substitute tofu to make this pescatarian (because of the fish sauce).

Sauce

  • 1/4 c crunchy peanut butter
  • 1.5 T fish sauce
  • 1.5 T dark soy
  • 2 t sugar
  • 2 t cornstarch
  • 1 garlic clove, minced (reduced from 2)
  • 2 t grated ginger
  • 1/2 t curry powder (optional...reduced from 1.5 t)
  • 1/4 c water

Other

  • 180 g thinly sliced chicken breast
  • 1 t baking soda
  • 100 g dried rice noodles
  • 2 T oil
  • 1 garlic, minced
  • ~1 c shredded carrot
  • ~1.5 c shredded white cabbage
  • ~1 c beansprouts
  • chopped peanuts
  • cilantro
  1. Tenderize the chicken: Place chicken and baking soda in a bowl and mix by hand. Set aside for 20 min. Rinse well in a colander and shake off excess water. Pat dry with a paper towel.
  2. Place sauce ingredients, except water, in bowl. If peanut butter is natural, add salt, sugar and oil. Microwave if necessary to soften the peanut butter. Stir in water.
  3. Prepare noodles by soaking in boiled water for package time. Drain, set aside.
  4. Heat oil in large skillet on high heat and saute garlic for 30 seconds. Add chicken and cook until outside is white. Add carrots and cabbage and cook until they start to wilt.
  5. Add noodles, sprouts and sauce. Stir for 1.5-2 min until sauce thickens and noodles are coated.
  6. Serve immediately garnished with peanuts and coriander.

Gimbap

This was delicious but we did not have enough rice or nori to make as much as we wanted to eat for 4 of us (1 adult, 3 kids). So next time, double the rice and get lots of nori (we had 5 sheets). Everyone loved it. Based on maangchi recipe.
3/24 Have made this several times without soy sauce in the beef to make it gluten free. Most recently at XBD's request. Leftovers brought for DBD's lunch/snack. Best to leave uncut in fridge and cut in the morning to prevent drying out. Tried new 10 sheet korean seaweed pack from AO.

  • sushi rice (2 c uncooked rice per 5 sheets)
  • 1/2-1 lb beef (skirt steak, tenderloin, or ground)
  • carrot matchsticks
  • pickled radish, cut into strips
  • spinach, blanched, rinsed in cold water and squeezed
  • 3 eggs
  • optional: cucumber sticks, pepper sticks, imitation crab sticks, avocado strips
  • garlic, minced
  • soy sauce
  • brown sugar
  • salt
  • sesame oil
  1. Rice: Cook short grained rice in rice cooker. Place hot rice in large shallow bowl. Mix with 1/2 t salt and 2 t sesame oil per 2 c uncooked rice. Let cool until it's not steaming. 
  2. Spinach: Combined blanched spinach with 1 cl garlic, 1/2 t salt and 2 t sesame oil. Mix well. Chop. Place on large plate with pickled radish slices.
  3. Carrot: Combine the carrot matchsticks with 1/4 t salt. Mix well and let sweat for 5-10 min. Squeeze out the water. Heat pan and add a few drops of oil. Saute carrots for about 1 min. Place next to spinach.
  4. Beef-1: In a bowl, combine 1 garlic cl, 1/4 t black pepper, 1 T + t 1 brown sugar, 2 t soy, 2 t sesame oil. Mix in trimmed, sliced steaks or ground beef. Mix well by hand. Set aside to marinate while preparing eggs.
  5. Eggs: Crack 3 eggs into bowl. Remove stringy white bits. Beat with 1/4 t salt. Drizzle a few drops of oil on heated pan. Wipe off excess oil. Turn the heat to low and pour egg mixture into pan. When the bottom is cooked, flip. Remove from heat and let it cook in pan for another 5 min (This is to prevent browning). Cut into 1/2" strips. Place next to spinach.
  6. Beef-2: Heat pan over med-high and cook beef, stirring.
  7. Assembly: Place nori on bamboo mat with shiny side down. Evenly spread rice leaving 2" gap at top. Dot top with rice for sealing. Place favorite filling inside, making sure to reach left and right edges. Use both hands to roll tightly, pressing mat as you go. Slice each roll with sharp clean knife.
  8. Use leftover toppings to make poke bowl.

Cheater Bulgogi Beef

You can make bulgogi sauce from scratch, but instead I just bought jars from the local asian market. Tried one and the DBD really liked it, so going to add this into the dinner rotation.

  • 90 g bulgogi sauce
  • ~1 lb beef (rundreepjes, thinly sliced steak, other)
  • oil
  • vegetables (sprouts, mushrooms, gailan, carrots, etc)
  • rice/noodles
  1. Marinate the beef for 3 hours to overnight, covered in the fridge.
  2. Heat oil in pan and cook beef until cooked through (~2 min each side).
  3. Remove to serving dish.
  4. Saute vegetables in saucy pan.
  5. Serve with rice or noodles.

Japchae

I've missed jap chae so much since leaving Seattle. Combined with not being able to eat onions and peppers, it's high time I made it myself. I bought a package of the Korean japche noodles in Canada, and then gave it away when leaving the country. I've found some here in the asian market and finally got around to making it. Delicious. Original recipe was for 4 oz noodles, but that was not enough. Neither was just 1 egg yolk.
Jan '23 Made this with GG and having her chop half the veggies made this go so much faster. Didn't have any scallions.
1/9/24 Had no garlic left, still tasted great. 4 eggs but XBD said it still wasn't enough.

  • 4-8 oz chapchae noodles (sweet potato starch noodles)
  • ~4 oz beef (filet mignon or pork shoulder, cut into strips
  • 2 shiitake mushrooms, rehydrated
  • carrot, cut into matchsticks
  • eggs
  • 2 cloves garlic, minced
  • scallions, cut into 2 inch long pieces
  • 4-5 white mushrooms
  • spinach
  • salt + pepper
  • soy sauce
  • sugar
  • sesame oil
  • sesame seeds

  1. Put the beef and shiitakes in a bowl with 1 clove garlic, 1 t sugar, 1/4 t pepper, 2 t soy sauce, 1 t sesame oil. Cover and refrigerate.
  2. Prepare the egg strips.
    1. For traditional yellow egg. Beat egg yolks (without the white stringy stuff) with some salt. Heat the pan and add 1 t oil. Wipe off excess oil so only a thin layer remains. Add the egg and turn off the heat (this keeps the egg as yellow as possible). Tilt to spread to thin layer. Cook for about 1 min and then flip and let it sit for another minute. Let it cool and slice it into thin strips. 
    2. For whole eggs (if you have no use for egg whites), beat the whole egg and make flat eggs (chinese fried rice style). Cut into strips. 
  3. Bring large pot of water to boil. 
    1. Blanch the spinach for 30-60 seconds. Rinse the spinach in cold water, squeeze out the water. Chop. Put in large bowl and mix with 1 t soy and 1 t sesame.
    2. Cook noodles, stirring for 1 min. Cover and cook for another 7 min until they are soft and chewy. Strain and cut them a few times with scissors. Add noodles next to spinach. Add 2 t sesame, 1 t soy, 1 t sugar (per 4 oz noodles).  Mix noodles well to season and keep from sticking.
  4. Heat skillet over medium high heat. Add 2 t oil and saute green onions with salt for 2 min. Transfer to noodle bowl.
  5. Heat skillet with 2 t oil and cook white mushrooms with a pince of salt, about 2 min until softened and juicy. Transfer to noodle bowl.
  6. Heat skillet with 1 t oil. Add carrot and stir fry 40 seconds. Transfer to noodle bowl.
  7. Heat skillet with 2 t oil. Add beef mixture and cook until no longer pink. Transfer to noodle bowl.
  8. Add 1 garlic clove, 1 T soy, 1 T sugar, 1/2 t pepper and 2 t sesame oil to the noodle bowl and mix together. Add the egg garnish and 1 T sesame seeds.

Chinese Style Shrimp and Snap Peas

The traditional dish is shrimp with snow peas but we have an abundance of snap peas growing in the garden and they make a fine substitute. I found this incredibly delicious but the kids were not keen on it (nor did they refuse to eat it). It's important to prep all the ingredients while marinating so they can be added quickly to the pan.

  • 450 g/1 lb shrimp, deveined, shells removed
  • 2 t cornstarch
  • 1/2 t salt
  • 1 T shaoxing wine
  • big bowl of fresh snap peas (or snow peas)
  • 1 T ginger, minced
  • 3 cl garlic, sliced
  • 2 T high heat oil
  • 1/4 c chicken broth
  • 2 t soy sauce
  • 1 small stalk green onion, big pieces if not eating, small if eating
  • 2 t sesame oil
  • optional: white pepper, water chestnuts
  1. In a medium container, combine cornstarch, salt and shaoxing wine. Add shrimp. Stir. Let marinate for 15-20 minutes.
  2. While marinating, prepare the ginger, garlic, peas and green onion.
  3. Use high heat to preheat pan for 1 minute. Add oil and heat another 30 seconds.
  4. Add the garlic and ginger and stir for 30 seconds.
  5. Add the shrimp with all the marinade, peas, broth and soy sauce. Stir for 2 minutes.
  6. Add the green onion and stir another minute.
  7. Remove from heat and drizzle with sesame oil.
  8. Serve over rice.

Cong You Mian

HM made this for us and it was beyond delicious. I wanted to try my hand at it but it did not come out nearly as well, so I will have to play with it. I used olive oil instead of cooking oil and the noodles were from Amazing Oriental and weren't just flour and water (they had sugar and other ingredients in them). The cong were very big (how does that change the flavor?). Or perhaps I didn't use enough noodles, as they came out very dark. The cong you (scallion oil) flavor was not as strong in mine - perhaps I didn't cook them long enough.

  • 4 T cooking oil
  • 5 stalks scallions, cut into long sections (about 50 g)
  • 2 T soy sauce
  • 2 T dark soy sauce
  • 2 t sugar
  • 400 g dried thin, round noodles
  1. Pour oil in wok. Add white parts of scallions. Simmer over medium low heat until they wrinkle. Add the green part. Continue to cook until they turn brown, about 10 min. Remove scallions.
  2. Add soy sauces and sugar. Cook until the sauce starts to bubble. Remove from heat.
  3. Cook the noodles. Drain and rinse briefly. 
  4. Put noodles in oil and stir to evenly coat. 
  5. Portion out to 4 serving bowls. Top with the fried spring onion and optional cooked vegetables.

Beef Shank Noodle Soup

aka Niu rou mian. This dish came out delicious and even DBD liked the soup broth. I substituted garlic for onion.
6/11/22 Made this again, this time with MM, delicious as ever.

  • 1 T oil
  • 1 carrot, sliced
  • 1 garlic, minced
  • 1.5 c water
  • 1 c beef braising liquid from shank recipe
  • 2 T ketchup
  • 3-4 servings of wheat noodles (ramen, udon, etc)
  • broccoli pieces (or Chinese greens)
  • braised beef shank, chopped
  • salt
  • optional: white pepper, pickled radish, chili oil, cilantro
  1. Heat oil in pot over medium-high heat. Cook the carrot for 2 min. Add the garlic. Stir to prevent burning and cook another minute.
  2. Add the water, braising liquid, and ketchup. Simmer for 10 min
  3. In a separate pot, cook the noodles. When done, rinse with cold water and place into serving bowls.
  4. Cook the greens in the same pot for about 1-4 minutes (to desired consistency). Place greens in serving bowls.
  5. If the shank is cold, add it to the broth to warm it up for minute.
  6. Taste the broth. Add salt and white pepper as needed. Pour into the noodle bowls and add beef pieces and optional toppings.

All in One
2026 Been making this as an all in one instead. Left out garlic to test out my possible intolerance. Left out sichuan peppercorns. Use leftover beef to make niu rou hua juan.

  • 4-5 beef shanks
  • 1 T cooking oil
  • 1/2" ginger, thinly sliced
  • 2 scallions, cut into 2" pieces
  • 2 cl garlic, roughly chopped
  • 2 T yellow bean paste
  • 3 T rice wine (Shaoxing)
  • 1/4 c  soy sauce
  • 1/4 c light soy sauce
  • 1 T brown sugar
  • 3 star anise (was 5)
  • 1 cinnamon stick
  • 1 clove
  • 1/2 T sichuan peppercorns
  • 1-3 dried chilis (depending on spice level)
  • 1 tomato, cut into wedges
  • optional: 1/2 daikon, peeled and cut into chunks
  • 2 carrots, cut into chunks
  • noodles, greens (bok choy, broccoli), cilantro
  • salt
  1. Blanch the beef in pot of cold water. Bring to boil. Remove and rinse under cold water. Discard water.
  2. Heat over med-high ginger, scallions, and garlic, until fragrant. Stir in bean paste and cook for 30 seconds.
  3. Add the beef and stir fry until lightly browned. 
  4. Stir in rice wine, soy sauces and brown sugar.
  5. Cover with water, adding star anise, cinnamon, clove, peppercorn, chilies and tomato. Bring to boil, reduce and simmer over low for 2.5-3 hours.
  6. Halfway through, add daikon. 15 min before, add carrot.
  7. Cook noodles and greens. Cut shank into chunks. Place all in bowls.
  8. Strain liquid before storing (so the star anise doesn't overpower the flavor).

Stovetop Braised Beef Shank - Jiang Niu Rou

MM found 3 beef shanks at the local grocery store and put me in charge of cooking them. My dad showed me how to braise them Chinese style years ago but I never tried and forgot the details (except about blanching the meat and skimming the water). This recipe skipped the draining part. It turned out delicious - the whole family loved it. And I used the leftover broth to make a beef noodle soup, brown eggs, and enjoying plain.
6/11/22 Made this again and when it was time to eat the meat was still a bit tough. We let the rest sit on the stove to cook another 1 or 2 hours and then it was perfectly soft. This time had the peppercorns and shaoxing wine. Used 5 shanks and increased ratio of ingredients accordingly.
Jan '23 Blanched the beef first and drained before cooking with all the flavors in fresh water. This made skimming it easier. Also used new brand of soybean paste.
Feb '23 Blanched first again. Should try blanching with wine next time.
Oct '24 Blanched with Shaoxing wine and cooked extra long - 4 hours - Meat was super tender. Ran out of soybean paste and left out onions

  • 3 beef shanks (next time try more to have more leftovers?)
  • 2 T Shaoxing wine (I didn't have this so used sake instead)
  • 4 green onions, cut into 2" long pieces
  • 1 thumb ginger, sliced
  • 1 t Sichuan peppercorns (also did not have this)
  • 2 T fermented yellow soybean paste (I used fermented, but maybe not yellow)
  • 2 T light soy sauce
  • 2 T dark soy sauce
  • 3 bay leaves
  • 3 cloves (I couldn't find the whole cloves so added a dash of ground cloves)
  • 2 star anise
  • 1 cinnamon stick
  • 1/4 t nutmeg
  • dash of cardamom (original asked for 1 black cardamom, optional)
  • 1 T sugar
  • 1 t salt
  1. Blanch the beef: Add the shanks into a pot. Add 4 cups of cold water to cover the beef. Add the onions, ginger, peppercorns and Shaoxing wine. Cook over medium-high heat until it boils. Turn down to medium. Boil for 10 min and skim the foam off regularly.
    1. Alternative: Cover shanks with water and add Shaoxing wine. Boil for 10 minutes, skimming off foam regularly. Drain. Cover shanks in fresh water and add flavorings.
  2. Make the paste: Combine the soybean paste and soy sauces in a bowl. Mix until dissolved into a smooth sauce.
  3. Add the paste to the shank pot, along with the rest of the ingredients. Cook over medium-high heat until it simmers. Turn to medium-low and simmer, covered, for 2 hours (until meat is tender). (Range can be 1.5-2.5 hours depending if you want it to fall apart or not).
  4. The beef is ready to eat. Store leftover meat and broth in covered container in fridge. Use beef to eat plain (sliced thin, cold), as addition to beef noodle soup, or on top of rice. Use broth to cook vegetables, make a soup, or flavor rice.

Vietnamese Style Bun (Noodles) with Pork

There aren't many Asian options here so I need to start exploring home cooking some favorite dishes. Starting with Vietnamese bun. I meant to buy pre-made spring rolls but I forgot. I didn't have any pickled daikon so used Chinese pickled radishes instead. Both BDs liked the meat.
2/2/22 Used the frozen marinated pork leftovers to make this again. This time with carrots, cucumber, lettuce, sprouts, mint and basil over pad thai noodles. Broiled the pork at 240C for 3-4 min each side.
1/8/24 Only had 1.5 cloves for marinade and omitted garlic from dipping sauce. Shredded old carrots and they went brown quickly. BDs devoured.
3/24 Doubled recipe for meat and froze more than half for ease of preparation next time. But forgot to cook the frozen spring rolls!

  • Marinade
    • 3 T shallots, minced
    • 1.5 T garlic, minced
    • 1/4 c sugar (or scant)
    • 1 T fish sauce
    • 1/2 T thick soy sauce (used regular)
    • 1/2 T pepper
    • 3 T neutral cooking oil
  • Pork Shoulder (1.5-2 lbs), sliced in 1/8" pieces
  • bun noodles (~200 g for 4 people, or double for hungry adults)
  • Dipping Sauce
    • 6 T water
    • 2 T sugar
    • ~1.5 T fresh lime juice
    • ~2 T fish sauce
    • 1 cl garlic, minced
    • optional: chili flakes
  • Garnish: carrots, cucumber, crushed peanuts, pickled daikon, chopped lettuce, mint, coriander, basil, spring roll, bean sprouts
  1. Mix marinade ingredients until sugar dissolves. Add pork. Leave in fridge overnight for best results, otherwise at minimum 1 hour. (If making a double batch, transfer half to freezer for use another day.)
  2. Preheat the oven to 375F/190C.
  3. Make the dipping sauce.
    1. Put water in small bowl. Add sugar and stir until dissolved.
    2. Add lime juice to desired taste (aim for limeade).
    3. Add fish sauce - taste - it should be strong since it will be muted by noodles.
    4. Stir in optional garlic and chili if using.
  4. Lay pork on foil lined tray and bake for 10 minutes until pork is about 80% cooked.
  5. Set to broiler, at least 200C until browned, flip and brown other side. Watch closely to prevent burning!
  6. Cook the noodles according to the instructions (ie boil for 8 minutes). Distribute to bowls.
  7. Prepare the garnish.
  8. Serve: Spoon desired amount of dipping sauce over noodles, stir. Top with garnish. Enjoy!
